Chocolate Bliss Cake with Brandy-Spiced Cherries

Preparation

  • 1 package Chocolate Bliss Cake Mix
  • 2 organic eggs
  • 2 ounces organic Neufchatel cheese
  • 1/2 cup oil or 1/4 cup oil and 1/8 cup prune puree*
  • 2 tsp. vanilla
  • 1/2 cup hot, strong organic coffee
  • 2 Tbsp. brandy
  • 3 cups frozen organic cherries
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • Mint sprigs or cinnamon sticks for garnish (optional)

Instructions

Prepare cake according to package instructions. While the cake bakes, prepare the topping. Add the frozen cherries to a small saucepan over medium heat. Pour in the brandy, the remaining vanilla, the cinnamon and the nutmeg. Cover and reduce the heat to medium-low, letting the cherries absorb the brandy and spices. Slice cake, divide among plates, top with cherry mixture, garnish with mint or cinnamon. Serve warm.
