However you like your biscuits, there’s no denying that these delicious comfort-food creations make weekend breakfasts more enjoyable. But if you’re following a low-carb, ketogenic or paleo lifestyle, there’s probably not much room in your diet for delicious biscuits.
Well, not anymore… because today we’re sharing our favorite recipe for authentic and easy-to-make Keto Drop Biscuits that are sure to please even the most discerning biscuit lovers!
If you’ve given up grains, it’s the simple things like bread and biscuits that we often miss the most. The chewy roll that accompanies your favorite creamy bowl of soup… the slice of toast to dip into your runny breakfast egg… or the crusty French bread to dredge liberally in olive oil and herbs.

So, without further ado, let’s bake up easy some Keto Drop Biscuits!
Keto Drop Biscuits: The Step by Step
You’ll find the printable recipe at the bottom of this post, but for now, let’s walk through it.
In addition to a few simple ingredients, you’ll also need a hand mixer (or stand mixer) for this recipe. You’ll also need a couple deep mixing bowls, silicone spatula, and a cookie sheet. In lieu of the cookie sheet, you might also consider a cast iron pan (our personal preference for making the crispiest biscuits).
As for the ingredients…
You’ll need 1 cup Miracle Mix, 5 egg whites (or ⅔ cup liquid egg whites), 2 Tbsp. ground golden flax or white chia (don’t use brown flax or black chia – unless you don’t mind grey biscuits), a couple tablespoons of butter (or palm shortening), and a teaspoon of grain-free baking powder for extra oomph.
(Tip: Commercial baking powder contains corn starch. But you can easily make your own grain-free baking powder by combining 1 Tbsp. cream of tartar + 1.5 tsp. baking soda. Whisk well and store in an airtight container.)
Now, whisk together 1 tsp. baking powder with 2 Tbsp. golden flax and 1 cup Miracle Mix.
Add the cold butter…
And using a pastry blender or your hands, mix to the consistency of coarse sand.
Transfer the mixture to the freezer to chill. Meanwhile, whip egg whites until stiff peaks form.
Now, preheat your oven to 425 F and prepare your pan with a little grease
Fold the egg whites into the chilled Miracle Mix blend
To create a thick batter…
Now, scoop up roughly 2 Tbsp. of batter and drop onto the greased pan…
Once all batter is in the pan, transfer to your preheated oven and bake until golden (about 16-18 minutes).
- 1 cup Miracle Mix
- 5 egg whites (⅔ cup liquid egg whites)
- 2 Tbsp. ground golden flax (or ground white chia)
- 2 Tbsp. butter, cut into pea sized pieces, and chilled in freezer
- 1 tsp. grain-free baking powder
- In a medium bowl, whisk the Miracle Mix, flax and grain-free baking powder.
- Place the chopped butter into the freezer. Add cold butter to flour ingredients. Mix with hands or pastry blender to coarse sand consistency.
- Transfer mixture to the freezer. Preheat oven to 425, prepare a cast iron griddle or cookie sheet. A parchment lined pan will work too, but cast iron gives best texture Whip egg whites to stiff peaks. Fold whipped whites into flour mixture to form a thick batter. Scoop by 2 Tbsp. onto prepared pan, shaping gently.
- Bake for 16-18 min to golden.
