Over the years, we’ve tested and developed hundreds of recipes and formulas for gluten-free bread. Frankly, some of the results were awful. Some were good. A few were great. And one was clearly the “best of the best.”

That formula has become our Crusty Boule  and we believe the taste and texture of this grain-free bread will rival even the best artisan breads you’ve tasted!

As it bakes, you will love the intoxicating aroma that fills your home and lifts your spirits. Your mouth will water with anticipation. And we guarantee the wait will be worth it. With its crusty exterior and dense, chewy center, this rustic loaf is up for any preparation or occasion. And it practically begs to be buttered!

The carbs in this bread are a bit higher than our Better Bread Mix. But it still contains 50 percent fewer carbs than the average commercial loaf. Healthy, grain-free bread has never tasted quite so good!

You Will Need:
1 Crusty Boule Mix
2 tsp. active dry yeast
2 tsp. honey, maple syrup or coconut sugar
1¼ cup water
Egg Wash: 1 egg yolk + 1 tsp. water (optional)
Seeds: Poppy seeds, sesame seeds (optional)

Heat water to 105-110 F. Stir in sweetener, yeast. Let stand 5 minutes. Pour Crusty Boule Mix into a medium bowl. Add the yeast mixture and stir with a silicone spatula to form dough. Knead dough for 1 minute. Cover with a warm, damp cloth and set in a warm spot for 1 hour. Dough size will increase slightly. Place a pizza stone in the oven and preheat to 425 F (stone is optional, but produces best results). Divide dough into two balls and place on parchment paper or a pizza peel. Dip hands in water and shape into rounded loaves. Brush with egg wash and sprinkle with seeds (if using). Use a serrated knife to make ¼-inch deep cuts on top of loaves to allow for expansion. Slide prepared boules onto preheated pizza stone. Bake 40-45 minutes or to an internal temperature of 205-210 F. Cool completely on a wire rack. Slicing before cool may produce a gummy texture. Store in an airtight container.
