You Will Need:
1 Blueberry Muffin Mix
4 pastured eggs
½ cup coconut milk, almond milk or kefir
½ cup coconut oil, avocado oil or butter, melted
1 tsp. vanilla extract (optional)

Directions:
Preheat oven to 350 F. Line a muffin tin with unbleached paper liners. In a medium bowl, whisk together eggs, coconut milk or kefir and vanilla extract (if using). Pour in Blueberry Muffin Mix and stir well with a rubber spatula to make a smooth batter. Divide batter among muffin cups and transfer to preheated oven. Bake 18-20 minutes to golden brown and a toothpick inserted into the center comes out clean.
