You Will Need:
1 Carrot Cake Mix
1½ cups fresh grated carrots
3 large organic eggs
2 Tbsp. macadamia nut oil or coconut oil (melted)
2 Tbsp. water
½ cup organic chopped pecans (optional)

Preheat oven to 350 F. Grease a 9-inch cake pan or prepare a cupcake pan with liners. In a medium bowl, beat the eggs until light yellow and frothy. Mix in the oil. Add Carrot Cake Mix and water, blending well to thoroughly combine. Fold in carrots and pecans (if using). Pour into prepared pan. Bake 25-30 minutes for cupcakes and 30-35 minutes for cake.
