You Will Need:
1 Crispy Flatbread Mix
2 tsp. active dry yeast
2 tsp. honey, maple syrup or coconut sugar
¼ cup water
1 Tbsp. egg white or egg white substitute*
1 Tbsp. extra virgin olive oil

Directions:
Heat water to 105-110 F. Stir in sweetener and yeast and let stand for 5 minutes. Add egg white (or substitute) and oil to proofed yeast. Stir to combine. In a medium bowl, add the Crispy Flatbread Mix.  Pour in the yeast mixture and stir with a silicone spatula to form dough. If dough is dry, add 1 tsp. water. Knead for 1 minute. Return dough to bowl, cover and set aside in a warm spot for 30 minutes. Preheat oven to 450 F. Place a pizza stone in the oven to preheat (optional, but produces best results). Divide dough into two balls and roll out to 6×10 inch rectangles on parchment. Slide parchment with prepared flatbread dough onto the preheated pizza stone. Bake 8-9 minutes to golden brown. Remove from oven. Add toppings and return to oven for desired time.

*NOTE: For egg white substitute combine 1 Tbsp. water with 1 tsp. ground flax and let stand 5 minutes.
