Why do you recommend coconut oil for baking?

Coconut oil lends delicious flavor and moisture to baked goods. It also comes with a bevy of health benefits. It is rich in medium chain triglycerides (MCTs) which the body readily uses as fuel (instead of storing as body fat). And the lauric acid in coconut oil has immune boosting properties. Other healthy fats we recommend include avocado oil, organic ghee, macadamia nut oil and organic grass-fed butter.
